Spoiled tuna was the major cause of cooking poisoning suffered by nearly 500 workers in Ho Chi Minh City between June 11-13, the municipal Department of Health said Saturday.

It said that hot weather speeds up the decomposing process of the fish, creating histamine. The higher the histamine content in the fish, the more likely food poisoning will occur, department officials said.

The department took samples of food from the companies, meal suppliers and the Binh Dien Market in HCMC’s Binh Chanh District.

Test results showed some samples contained histamine nine to 10 times higher than the allowed amount.

The health department plans to hold a meeting of all concerned parties to ensure that fish used in all meals are fresh and safe.
