It is not only preferred by the dwellers of Huế ancient capital, but also became a famous dish of Huế and that many visitors have chosen when they come to Huế.

When it is autumnal, the weather becomes cool with the light rains at the end of the day, the women of Huế city begin to prepare typical dish of Huế to her family menu that is spring rolls.

Ms. Lê Thị Mẫn – Chef Assistant of the Hương Giang Hotel Resort & Spa, revealed that to prepare this dish for a family with four members, materials for spring rolls including 0.5 kg of chicken breast, 2 chicken eggs, 0.2 grams of white cat’s ear mushroom, 0,2 gram of vermicelli, 1 gram of carrot,  0.2 gram of onion, 0.2 gram of garlic, 0.1 gram of pepper, 0.2 gram of chili, 0.3 gram of lemon, 0.5 gram of tomato, 5 packages of rice pancake, 0.5 liters of oil, 0.2 grams of sugar, 0.5 bottles of rice vinegar, 0.1 gram of rice flour; 1 package of sharpen bamboo stick; some small candles and raw vegetables.

To make spring rolls, the women of Hue city city will filter out the bone of chicken breasts and shred. Then shredded pork will be mixed with chicken and the spices. Vermicelli and cat’s ear mushroom will be soaked into warm water. Fresh carrots will be washed and peeled. Vermicelli, cat’s ears, carrots will be chopped after draining.

Put some onions, garlic, pepper, spices into meat, then add the egg yolks after mixed well. Wet the rice pancake, then cut them into halves, put flesh and the mixture then pack up. Put some cooking oil to the frying pan after the pan get very hot and turn the fire in medium, fry spring-rolls until they have golden color, take them out of the frying pan and put on paper tissue to drain. Good spring-rolls is brittle with yellow color and smell of meat and spices. Spring-rolls should be served with sweet and sour sauce and raw vegetables.       

Especially, to make truly eye-catching, delicious, sweet-smelling spring-roll as characteristic of "royal dish" in the old days, many women of Huế who have wonderful dexterity cut the pineapple into the shape of alcohol jug, with a little space by removing the internal part of pineapple. After the pineapple with alcohol jug shape is formed, the pieces spring-rolls will be stuck into the surrounding alcohol jug. Then a small candle will be lit and put inside the pineapple. The glistening of the candle inside the pineapple will give fragrance and also keep spring rolls with moderate heat.

This dish is not only preferred by the dwellers of Huế ancient capital, but also became a famous dish of Huế and that many visitors have chosen when they come to Huế.
